Easter Basket Cookie Cupcake

I love trying out a recipe and customizing it to give it a new flavor or style.  I wanted to do something different from regular cupcakes, and was inspired by an Easter basket filled with cookies, candies and chocolates. When you bite into the cupcake, you get a nice chocolaty surprise in the middle. Thus, this Easter Basket Cookie Cupcake. See also Easter Tablescape. 



Easter Basket Cookie Cupcake

Cookie Dough 
1 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg 
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt

Combine butter, sugar and egg in medium bowl.  Add flour, baking powder and salt then mix well. 

Fluffy White Frosting
1 container (16 oz) ready made vanilla frosting by Betty Crocker
1  cup marshmallow creme

Combine frosting and marshmallow creme in medium bowl and mix well. 

Topping:
Reese's Peanut Butter Cups
marshmallow strings
jelly beans
food coloring 

Instructions:
  • Preheat oven to 350 degrees.
  • Place paper baking cups in each muffin.
  • Use a large cookie scoop to create a round ball out of the dough.
  • Use a pastry shaper or spoon to create an indentation in the middle of the dough to form the crust. Place Reese's candy inside the hole. 
  • Bake for 12-14 minutes. Immediately after cooking, sprinkle some sugar on top.
  • Cool cookies cups  in muffin tray at least 5 minutes then transfer to wire racks.  Cool completely before decorating.
